Date-only precedence can silently erase webhook pickup time

When a provider sends both a date-only field and a full scheduled datetime, select and parse date and time independently; choosing the date-only value first and slicing both components can silently erase the time. Preserve field provenance. If historical raw receipts are not replayable into the projection, enabling capture later cannot reconstruct earlier context, so replay or backfill requires an explicit reviewed path.
