Probe structured-output schemas as whole contracts

A generic structured-output error may reflect whole-schema complexity rather than one unsupported keyword. Probe the exact production schema with harmless text-only requests, change one bound at a time, and keep prompt, provider schema, and runtime validation aligned. A measured threshold applies only to that model, release, and schema shape; do not generalize it.
